Autumn is one of the most rewarding seasons to visit Spoleto. The vineyards are busy with the grape harvest, olive growers are preparing for the new olive oil season, and the surrounding hills provide an abundance of truffles and chestnuts. On a rainy autumn afternoon, I met some old friends from Spoleto for lunch. When the weather turns cool and the streets glisten with rain, there is nothing more comforting than a plate of strangozzi cacio, pepe e tartufo nero.

Strangozzi is a traditional Umbrian pasta, similar to tagliatelle but slightly narrower and with a distinctive texture. The sauce is deceptively simple: local cheese, black pepper, a little pasta cooking water, and freshly shaved black truffle. Together, these ingredients create one of the most authentic flavours of central Italy.
