One expects that besides eating food, talking about it is as important here in Italy. A friend of ours, over dinner, talked about bread and wine. I said that while I like bread fresh from the oven, the taste from a days old bread is far superior. Ma si! he replied, you know we have a proverb for that. Vino di un anno, pane di un giorno. Which translates that you want your wine one year old and your bread one day. Amen, though I wonder if there is a proverb regarding new olive oil. Nothing is better than a one year old wine, a piece of bread and some new olive oil … !
