Torta al Testo

Torta al testo (or crescia)is a traditional Umbrian food. A sort of flat bread shaped like a pizza but apart from that there are not many similarities. Traditionaly it was baked on a hot stone (testo) placed over the coals in the fireplace.

These days Torta al Testo is eaten filled with ham, mozzarella or sausage and ‘erba cotta’ (cooked green leafy vegetables/herbs) Some restaurants serve Torta with the meal  instead of bread. Here two pictures of Torta production. They were taken during a great annual sagra (festival) in lovely Umbertide.

No woodfire here but a very handy modern gasflame……
